Eric's Eagle Court of Honor

Well, here's the scouting history in a nutshell.
Lot's of wood projects, awards, a few pinewood derby cars and
trophies, scout awards and pictures. 'Nuff Said.

Cinco de Mayo Goodness

Just a traditional burrito, nothin too fancy.  But, I did try out the new
pressure cooker in order to make the refried beans from scratch.
They turned out mediocre.  I think next time I'll try a fresher can
of church pinto beans, not the same one that's been open since
we made bean bags about 15 years ago.  That could help a bit.
By the way, this guacamole is turned out to be the best ever.


Wow, tres leches cake.  Just looking at this makes me hungry!
It was definitely a success.

Devin's Missionary Open House

The weather was perfect.  Warm, sunny, very light breeze.
It's a good thing.  92 people would not have fit into this house! 
Luckily we have a patio, otherwise known around here as
a sports court.  Well, it's flexible.  Sunday, it was just what we
needed. We put out some food, and had a lovely time visiting
with lots and lots of friends and family.  It was a very happy
day for me.  My son is going on a mission! 

Yeah, this kid right here.  The one who finally got a break
from visiting long enough to take a bite of something, apparently.
And Victoria was so sweet.  She offered to help with the
food.  It's a good thing.  I was a little surprised at how
many times we needed to make more lemonade, and
refill the roll basket, etc.  Who knew this many people
would show up?  I loved it!

This looks like quite abit of dessert, but it was long gone
by the end of the evening.  It must have been good.

There was a nice showing of young adults from Devin's ward.
I left my camera in the house, and just talked and refilled
food trays.  Eric took these pictures, then he got busy with
cousins.  They're not great, but they're all we've got!

Happy Cinco De Mayo!

It's Fiesta time!  The best part is the menu.  Tonights dinner, Taco Salads, rice & beans, and for dessert, I will attempt my first tres leches cake.  Katie introduced me to this wonderful treat when I was visiting Utah.  We ate at one of the many delicious restaurants and shared a piece of tres leches cake for dessert.  YUM.  I've been wanting to make it ever since, and today I finally have an excuse!  I'm also excited to be making my own refried beans and mexican rice using my new pressure cooker.  It greatly reduces cooking time and keeps all that good flavor and moisture in the food.  Beans should only take 35 mins. compared to 3 hours on the stove.  Plus, I would really like to start using up the many cans of food storage beans out in the garage.  I've just never been one to plan ahead enough to start soaking them the night before.  Cooking in a hurry is much more my style. Wish me luck!
