Happy Cinco De Mayo!

It's Fiesta time!  The best part is the menu.  Tonights dinner, Taco Salads, rice & beans, and for dessert, I will attempt my first tres leches cake.  Katie introduced me to this wonderful treat when I was visiting Utah.  We ate at one of the many delicious restaurants and shared a piece of tres leches cake for dessert.  YUM.  I've been wanting to make it ever since, and today I finally have an excuse!  I'm also excited to be making my own refried beans and mexican rice using my new pressure cooker.  It greatly reduces cooking time and keeps all that good flavor and moisture in the food.  Beans should only take 35 mins. compared to 3 hours on the stove.  Plus, I would really like to start using up the many cans of food storage beans out in the garage.  I've just never been one to plan ahead enough to start soaking them the night before.  Cooking in a hurry is much more my style. Wish me luck!

Easter Eggs

A few years ago I decided it was time to get creative with our Easter eggs.  I even used real moss in a bucket for these little floral creations. 

Eric and I had fun with the watercolor paints making polka dots and stripes and zig zags.

Spring Fix Up Time

The guys are really sprucing this place up.  Beautiful new bark for the front yard, and this place looks like a million bucks.  Next sunny day I'll get some "after" pictures up.

What a Game!

Tuesday's soccer game was so intense!  Unfortunately I forgot my camera, so the picture above is Eric playing at Sedro Woolley last Saturday.  But yesterday we played Lynden Christian up in Lynden.  No score for the whole game, but the whole thing was practically a shoving match.  That team is very physical, and their style of play caught our boys off guard.  But the defense we had was fantastic.  Anyway, Eric went into the game 1/2 way through the first period, played hard, then played most of the 2nd period and both overtimes.  His coach told him after the game that he did a really good job.  Then, Eric's name was in the paper today!

Tigers score shootout win over Lyncs

"Hunter Torset stopped two shots in a shootout and scored once himself Tuesday as the Burlington-Edison boys' soccer team remained unbeaten with a 1-0 win over Lynden Christian.
The teams were scoreless through regulation and two overtimes in the Northwest Conference opener for both.  Each squad missed its first penalty kick and made the second, then the Tigers scored on the next two while Torset stopped both to end the shootout 3-1.
'The first one he saved was a great save, ' Tigers coach Jay Powers said. 'He also buried our second kick, so it was the Hunter Torset show in the shootout.'
Eric Schenk and Diego Soto had good games for the Tigers, Powers said.
'Lynden beat us mightily in the first half,' he said.  'We came out and played much better in the second half' ".

Keith brought the sports page home from the Richeson's with him tonight.  Luckily Ron saw it or we would never have known!  You should have seen the giant grin on Eric's face when he saw his name in print!  Haven't seen him smile like that...well, maybe ever!  Good stuff!

Varsity Soccer - The First Match

Tonight was Eric's first soccer game.  It was exciting when we drove up to see that Eric had started in his very first varsity match!  He played the whole first half, in which his team scored 4 goals, and Lakewood scored 1.  Then he went in the last 1/2 or so of the second half, and while he was in our team scored once more, with an assist (throw in) from Eric. Final score, 5 -1. It was a fun match, and Eric played well.  We are looking forward to a winning season!

Unintentional...

After I put up the cute St. Patricks Day background and looked at this blog, I realized that Eric in his green shorts looks a bit like a leprechaun!  Oops, sorry Eric, but kinda fun!
